Good Info about Canned Goods

Here's some info from Wendy DeWitt's blog about the shelf life of commercially canned foods:

This quote is from the University of Utah Extension Center.
"Commercially canned foods should retain their best quality until the expiration code date on the can. This date is usually 2-5 years from the manufacture date. High acid foods usually have a shorter shelf life than low acid foods. For emergency storage, commercially canned foods in metal or jars will remain safe to consume as long as the seal has not been broken."
The Canned Food Alliance also shares this view that canned foods are safe to eat as long as the can is not damaged in any way. They will lose nutritional value but are safe to eat. With this information, and the knowledge that most of the foods from the cannery will last 20 and 30 years, food storage and it's rotation have become much easier for everyone.

Outdoor Camp Oven

This is not an endorsement of this product. Please research it carefully yourself.

Rebecca Harrison, from the Bethany Ward, is sharing this tip about a camp oven, as a possible alternative to a solar oven mentioned in Wendy DeWitt's presentation (remember her system is based on no electricity available). While a solar oven has a distinct advantage because it doesn't require fuel, it obviously has its limitations in Oregon because of our weather.

From Rebecca: I found an Outdoor Camp Oven that runs on propane. It has an oven and two burners so you can use it for baking and cooking. I found it at Costco for $149.99 (plus you get a discount coupon to buy accessories at the company website).

Also on the company website, you can read reviews, as well as see 3 short videos on using the product. We may not be able to always use a solar oven here in Oregon to prepare our chocolate brownies (Wendy DeWitt's year's supply must-have :) ) but this will sure work!

Here is a description from the website:

You've always wanted an oven when camping - Now you can with the Outdoor Camp Oven. Don't let its compact size fool you. The Outdoor Camp Oven features over 13,500 total BTU's, the twin burners and spacious oven have plenty of power to get your cooking/baking done right. This stove's folding lid is designed with portability in mind. This camp oven is loaded with features. It is just perfect for your cabin, summer camping, or RV.

Features:
Matchless Igniter burners, Stainless steel construction, Nonstick enamel cooking surface, Oven thermometer, 2 oven racks. Powered by a disposable 1 lb propane tank - Can be adapted to use a 20lb tank.

Specs:
Range 5,300 BTU's per burner, Oven 3,000 BTU's, Top burner dimensions 12 x 21,
Inside Oven dimensions W 16" x H 10" x L 10", Top oven heat: 400 degrees, Weight 35 lbs

Pefect for muffins, cookies, casseroles, and Dutch oven dishes. (Would need to have the right size cooking pans for the small oven size.)

Thanks, Rebecca, for sharing this tip with us!

Need RECIPES for your food storage plan?

A critical planning element of any food storage plan is WHAT to store. With Wendy DeWitt's system, she starts with specific recipes to answer that question. Maybe you've realized that you need to, or want to, take a look at more recipes. This may be the case if you want to plan some or all of your food storage meals for a worst case scenario (no running water and no electricity). Perhaps you are wanting to plan more one-dish type meals, or more meals using pantry items in place of fresh ingredients, or recipes using more long-term food storage items in your everyday cooking.

Here's some sources to check out:

Wendy DeWitt's booklet for her recipes.

Simply Prepared has a section on 'Book Reviews'. Click on the book title to open up a detailed book review. Also, on this site is a section 'Books.' You'll also find this book, Pantry Cooking: Unlocking Your Pantry's Potential.

Store Meals has a 5-week menu, complete with a shopping list, that is an extension of the author's cookbook.

Everyday Food Storage is beginning a new series on Emergency Cooking (or cooking with no electricity).

Food Storage Made Easy has lots of recipes. Check out their recipes using wheat without a wheat grinder.

Happy RECIPE Hunting!

Disaster Kit GIVEAWAY at Food Storage Made Easy.net

"Food Storage Made Easy" (see the link in the next column under "Helpful Websites) is offering a disaster kit FREE GIVEAWAY. To learn more, see the post on February 15th, "Disaster Kits...and a GIVEAWAY!"

Wendy DeWitt Food Storage System Booklet & Overview

To download a copy of Wendy DeWitt's booklet, "Putting the Foods You Love into Food Storage," click here.

Here's a short OVERVIEW of Wendy DeWitt's unique food storage system:

-Based on WORST CASE SCENARIO, no running water and no electricity.

-Determine how much food you need by basing your food storage on RECIPES.

-Factor in the type of COOKING SOURCE you will be using.

-Simplify rotation & avoid spoilage by storing items with 3+ yr SHELF LIFE.

-BOTTLE MEATS using a pressure canner--easy, juicy & tender, 3yr shelf life.

-Increase the shelf life of pantry items by VACUUM SEALING items in jars.

-STORE WATER for all your cooking needs.

-Create a food storage BINDER (recipes, exp dates, etc) & update annually.

Wendy's booklet explains all this and includes other helpful information: Food Storage Tips, Recipes, Substitutions, Source List and Equivalency Information.

The one question you may be asking...What can I use for a cooking source with no electricity? Check out a future post on cooking sources.
